This Chinese style salad is very good and you should try it. It’s fun to make because you get to beat up a cucumber! Sometimes we add extra vegetables to the salad so that it stretches a bit. Otherwise it gets eaten too fast and then it’s all gone and we are all sad. Things like thinly sliced red cabbage go nicely and add a pop of colour. The dressing in this Smashed Cucumber Salad is addictively delicious.

Ingredients:
1 long English cucumber
2-4 garlic cloves, pressed or crushed and minced
1 tbsp rice vinegar
2 tsp chili oil
1/2 tsp sesame oil
1 tbsp soy sauce
1 tsp sugar
1 /2 tsp salt
1 tbsp chili crisp
Method:
Loosely wrap the cucumber in a dish towel (splatter control!) and place on a cutting board. Carefully but enthusiastically smash the cucumber with a heavy kitchen tool (think cleaver, meat pounder, muddler, rolling pin… you get the idea).
Cut the smashed cucumber into 1/4 -1/2 inch chunks, place in a serving bowl and add the garlic.
In a separate small bowl, combine the remaining ingredients and mix well.
When you’re ready to serve and eat the salad, pour the sauce over the cucumbers and mix well.
